An ancient vegetable with roots having a unique flavour, something akin to oysters (hence named Vegetable Oyster). Sow and grow like parsnips, perhaps leaving a few roots in the ground for its young spring leaves that can be used in salads. May also be forced under a flower pot for "chicons". In the second year the purple flowers are very attractive.

WHEN TO SOW: Late March to early May.

WHERE TO SOW: In open ground in shallow rows 30cm apart.

WHAT TO DO NEXT: When large enough to handle, thin out to 15cm apart.

MATURITY: Ready for use from October onwards.
