An ancient vegetable with roots having a unique flavour, something akin to oysters (hence named Vegetable Oyster). Sow and grow like parsnips, perhaps leaving a few roots in the ground for its young spring leaves that can be used in salads. May also be forced under a flower pot for "chicons". In the second year the purple flowers are very attractive.

WHEN TO SOW: Late March to early May.

WHERE TO SOW: In open ground in shallow rows 30cm apart.

WHAT TO DO NEXT: When large enough to handle, thin out to 15cm apart.

MATURITY: Ready for use from October onwards.

Growbags are the most common method of glasshouse growing, 3 plants per bag. Outdoor plants should be set 45cm apart with 75cm between rows. Stake the plants for support tying the stem loosely to the cane. As small shoots appear a the leaf joints remove them when about 2cm long. Take out the growing point when the plants reach the glasshouse eaves or the top of the cane outdoors. Water regularly and often, uneven watering causes fruit to split and black blotches to form on the base of the fruit - known as Blossom End rot.
